Sweet Potato Salad

This delicious Sweet Potato Salad recipe was sent by Fran Boyle of Lansford, PA.

2 pounds sweet potatoes, peeled and cut into cubes
1/2 Vidalia onion, finely chopped
1 red pepper, seeded and finely chopped
4 green onions, thinly sliced
1/3 cup mayonnaise
2 tablespoons orange juice
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
Salt and freshly ground black pepper

Add the sweet potatoes to a large pot of cold salted water. Bring to a boil over medium-high heat and cook the potatoes until tender, about 15 minutes. Drain the potatoes and let cool in a colander.

Once the potatoes are cool, transfer to a large serving bowl and add the onion, red pepper, and green onions.

2 1/4 tsp kosher salt
1 1/4 tsp pepper
2 (1 1/4 to 1 1/2 pound) pork tenderloins, trimmed

2012 Ray of Light Show

Join WNEP-TV’s Julie Sidoni for the Ray of Light Awards Show, Sunday night at 8pm on WNEP2.

Memorial Day Weekend Travel

The American Automobile Association said Thursday is the start of the Memorial Day travel weekend and millions of people nationwide will be hitting the roads.

In the Lackawanna County area, there has been seemingly constant roadwork and long traffic delays, but PennDOT said crews have been working hard to complete roadwork projects before the holiday weekend. For the most part, major interstates will be smooth sailing.

AAA estimates nearly 40,000 people in the Wilkes-Barre/Scranton area will be traveling for the Memorial Day weekend, most of them driving to their destinations.

For weeks, drivers along parts of Interstate 81 in the Scranton and Wilkes-Barre areas have dealt with traffic backups, at times miles long, due to many on-going road projects.

PennDOT said for Memorial Day weekend, there should not be much construction congestion for many of the nearly 35,000 people in Lackawanna and Luzerne counties estimated to hit the road.

Purse Snatcher Spree in Hazleton

Women walking in downtown Hazleton are potential crime targets these days. In less than two weeks, five woman have been attacked and their purses stolen. Police believe the same man is the thief.

Hazleton Police said so far the bandit has only used his hands and speed to strike.

“So far we have had only some minor injuries of other people involved but that`s always a concern for us if he begins brandishing weapons, knives, firearms that`s always a concern,” said Lt. John Leonard.

What disturbs some people is the fact that all of the purse snatchings have been done in broad daylight.

Jessica Calderon of Hazleton said it’s not good that the thief is taking chances like that.

“That`s not good because it’s dangerous. We have a lot of things in our purse, no money but all the important papers in there,” said Calderon.

Man Charged with Assault

A man is locked up in Schuylkill County accused of assaulting a woman.

Police said it happened Wednesday afternoon along Interstate 81 near Trenton.

Investigators said Christopher Cuozzo of Port Carbon hit and choked Patricia Mistishin, also of Port Carbon, and pulled a knife on her, threatening to kill her.

Cuozzo is charged with assault, terroristic threats and harassment.

He is being held on $25,000 bail.
